β-cryptoxanthin is practically insoluble (in water) and an extremely weak acidic compound (based on its pKa). β-cryptoxanthin can be found in a number of food items such as pistachio, rose hip, java plum, and white cabbage, which makes β-cryptoxanthin a potential biomarker for the consumption of these food products. β-cryptoxanthin is a natural carotenoid pigment. It has been isolated from a variety of sources including the petals and flowers of plants in the genus Physalis, orange rind, papaya, egg yolk, butter, apples, and bovine blood serum .
Belongs to the class of organic compounds known as xanthophylls. These are carotenoids containing an oxygenated carotene backbone. Carotenes are characterized by the presence of two end-groups (mostly cyclohexene rings, but also cyclopentene rings or acyclic groups) linked by a long branched alkyl chain. Carotenes belonging form a subgroup of the carotenoids family. Xanthophylls arise by oxygenation of the carotene backbone.
