3-β-d-galactosyl-sn-glycerol is a member of the class of compounds known as glycosylglycerols. Glycosylglycerols are glycerolipids structurally characterized by the presence of one or more sugar residues attached to glycerol via a glycosidic linkage. 3-β-d-galactosyl-sn-glycerol is soluble (in water) and a very weakly acidic compound (based on its pKa). 3-β-d-galactosyl-sn-glycerol can be found in a number of food items such as skunk currant, european chestnut, oval-leaf huckleberry, and coriander, which makes 3-β-d-galactosyl-sn-glycerol a potential biomarker for the consumption of these food products.
