Isopentanol, also known as isoamyl alcohol or 3-methylbutanol, is a member of the class of compounds known as primary alcohols. Primary alcohols are compounds comprising the primary alcohol functional group, with the general structure RCOH (R=alkyl, aryl). Thus, isopentanol is considered to be a fatty alcohol lipid molecule. Isopentanol is soluble (in water) and an extremely weak acidic compound (based on its pKa). Isopentanol can be synthesized from isopentane. Isopentanol is also a parent compound for other transformation products, including but not limited to, isoamyl acetate, isoamyl formate, and 3-methylbutyl octanoate. Isopentanol is an alcoholic, banana, and burnt tasting compound and can be found in a number of food items such as poppy, komatsuna, bayberry, and herbs and spices, which makes isopentanol a potential biomarker for the consumption of these food products. Isopentanol can be found primarily in feces and saliva. Isopentanol exists in all eukaryotes, ranging from yeast to humans.
