(s)-4-hydroxymandelonitrile, also known as (2s)-hydroxy(4-hydroxyphenyl)acetonitrile, is a member of the class of compounds known as 1-hydroxy-2-unsubstituted benzenoids. 1-hydroxy-2-unsubstituted benzenoids are phenols that a unsubstituted at the 2-position (s)-4-hydroxymandelonitrile is slightly soluble (in water) and a very weakly acidic compound (based on its pKa). (s)-4-hydroxymandelonitrile can be found in a number of food items such as persian lime, common salsify, climbing bean, and vaccinium (blueberry, cranberry, huckleberry), which makes (s)-4-hydroxymandelonitrile a potential biomarker for the consumption of these food products.
