Petroselinic acid is practically insoluble (in water) and a weakly acidic compound (based on its pKa). Petroselinic acid can be found in a number of food items such as jicama, common salsify, orange bell pepper, and cardoon, which makes petroselinic acid a potential biomarker for the consumption of these food products.
