N-hydroxycadaverine is also known as N-hydroxypentane-1,5-diamine or 1-amino-5-hydroxyaminopentane. N-hydroxycadaverine is soluble (in water) and an extremely weak acidic compound (based on its pKa). N-hydroxycadaverine can be found in a number of food items such as pepper (spice), pistachio, radish (variety), and tinda, which makes N-hydroxycadaverine a potential biomarker for the consumption of these food products.
